this is supposed to be in answer to the question about it coming Iout grainy. You probably over mixed it. It had happened to me while I was in baking school I'm pretty sure it can't be fixed.

Before if you don't need to be exact about the colour. If you need to be precise, do it JUST before it's whipped all the way.

If you do, I wouldn't add too much liquid (definite a paste or gel), and ideally add it to the cream before adding that to the chocolate.
