All gluten free flours have different properties, take up liquid in different ways, etc. You're always welcome to experiment with substitutions, but they might not hold together, etc.

It’s so hard yummy gluten free recipes that my whole family can enjoy, but I made these for my family yesterday morning and everyone loved them! Yes, you can definitely freeze them. Honestly though, if you wrap them in plastic and keep them in the fridge, they'll be fine.
